Raw Choco Banana Widgies

Yep, I made that name up. But you get the picture – smooshy and chocolately, these little biscuits are delicious. There have been a lot of recipes floating around for ‘raw vegan oreos’, and these are an adaptation of various recipes. After making almond milk, I had some almond pulp that needed using, and this recipe was perfect for using it up. Now I know I could have made these look a little bit more perfect – if I had the patience and energy I would have have made little circles of the biscuit mixture before sandwiching a little mashed banana in the middle. As it were, I just cut the mixture up into rough squares and smooshed the mashed banana in the middle. A little rough I’ll admit, but delicious all the same.

Raw Choco Banana Widgies

Ingredients

1 1/2 cups almond pulp

1 tbsp honey

3 dates, chopped

1/2 cup cocao nibs

2 tbsp coconut oil

1/4 cup desiccated coconut

1/2 cup raw cocao powder

1/2 banana, mashed

method

Whiz everything except the banana together in a food processor until smooth. Hopefully a few cocoa nibs will remain whole which gives a yummy crunch to the biscuits.

Smooth the mixture into a baking tray to desired thickness, and leave to set for a few hours in the fridge.

Cut the biscuit base into small squares, or into even circles. Sandwich a little mashed banana between two squares/circles. Eat as is, or freeze for a more dense icecream sandwich!
